A Las Vegas backyard barbecue: shade, cold storage and a short drinks menu.

Keep the food and drinks stations manageable, protect cold storage, and decide when a warm-weather gathering should move indoors.

For a backyard barbecue, the drink list is only part of the shopping job. You also need somewhere to keep things cold, a serving area that works while the grill is busy, and a plan for guests to get out of the heat. Put those pieces in place before choosing an elaborate cocktail menu.

Use two cold-storage jobs

If space allows, separate the drink cooler from the perishable-food cooler. The drink cooler gets opened repeatedly; a separate food cooler is easier to leave closed until needed. That is also the approach suggested in USDAโ€™s outdoor food-safety guidance.

Keep perishable food at 40ยฐF or below while cold-storing it. USDA limits time left out to two hours, or one hour when the outside temperature is above 90ยฐF. These are food-safety limits, not a promise that anything left in a cooler without temperature control will be fine.

Use a thermometer to check the food storage, keep raw and ready-to-eat foods separate, and bring out manageable portions. A bag of ice that has mostly melted is a reason to check the setup, not an excuse to guess at the remaining safe time.

Give each drink a simple role

  • Water: a visible, independent station with easy refills.
  • Alcohol-free choice: something guests can recognize and enjoy without asking for a special arrangement.
  • Beer: the actual package and strength guests expect, stored cold and shaded.
  • Wine or a measured cocktail: one option that fits the food and equipment you have.

You do not need a full bar beside a hot grill. If a cocktail needs shaking and fresh preparation, give it a clean preparation area and a person who is not simultaneously handling raw food. Keep drink ice and clean serving tools separate from items used for food storage or preparation.

For wine, choose the serving temperature by style and keep the remaining bottle cool. Our patio wine guide gives useful starting ranges. For beer, light and heat are separate problems: cold storage does not make direct sunlight irrelevant.

Change the venue when the weather calls for it

Check the forecast and current alerts before setting the outdoor schedule. An evening start is not a guarantee that the temperature will be comfortable. The National Weather Service recommends cooling in air-conditioned places and avoiding alcohol during extreme heat. Plan an indoor option, shorten the outdoor portion or change the date if needed.

Keep a sober ride available for guests who drink. If the gathering includes a pool, use the pool-party plan to separate alcohol from swimming. The point of the setup is to make serving easy while leaving room to change the plan when the conditions change.
