BEHIND THE DRINK
The story & background
The IBA reference uses two rum components, orange curaçao, almond orgeat, lime and a little simple syrup. Its recipe is a layered rum-and-citrus drink rather than a pineapple-juice mix.
Measure the citrus and sweetener before mixing. Fresh juice varies in acidity, so start with the recipe and make small adjustments only after tasting the finished drink.
